Brown butter and the art of patience

Thirty seconds separates nutty, toasty brown butter from a burnt mess. Here is how we get it right every morning.

Butter browning in a copper saucepan

Brown butter is just butter cooked until the milk solids toast. Simple, right? Except it goes from pale gold to perfect hazelnut to bitter black in a matter of seconds, and you cannot walk away from the pan.

Listen, then look

The trick is to use your ears. Butter crackles loudly while the water cooks off. When it goes quiet and starts to foam, the browning begins. That is your cue to swirl constantly and pull it off the heat the moment it smells like toasted nuts.

The honey vanilla donut
The brown butter glaze builds on our honey vanilla base.

We pour it into a cold bowl immediately to stop the cooking, then whisk in powdered sugar, vanilla, and a splash of cream. The result is a glaze that tastes like the edge of a perfect cookie.
